19 Easy Meatless Dinners You Can Make in 30 Minutes or Less
I love cooking, but some nights when I get home, I’m way too hungry to spend much time in the kitchen. Standing over delicious-looking, fragrant food when you feel like you’re going to transform into a hunger werewolf is the epitome of torture. The sights, the smells—my appetite can’t handle it! I’m still going to cook, mostly because I’d rather not spend the extra cash on delivery. But unless I want to totally lose it, whatever I make needs to be ready as fast as possible.
On those nights when my stomach controls my brain, I immediately turn to vegetarian recipes. Since meat tends to take time and effort to properly prepare, I know I can usually count on meatless recipes to be at least a little bit speedier and easier to make. Things like salads, veggie-packed pastas, grain bowls, and simple soups, generally come together pretty quickly, especially if you already have things like veggies and grains meal-prepped from Sunday. Not to mention, taking a break from meat a few nights a week is better for your budget (and the environment). Basically, there’s no reason not to include a few meatless recipes in your meal plan.
